Things You'll Need
- Large soup pot
- 1 head of cabbage
- 6 green onions
- 1 bunch of celery
- 2 green peppers
- 2 cans of diced or whole tomatoes (28 ounces)
- Cooking spray
- 1 package of onion soup mix (1 1/4 ounces)
- 8 cups of water
- Salt
- Pepper
- Hot sauce (optional)
- Garlic powder (optional)
1. Chop cabbage, onions, celery and peppers into bite size pieces. Spray soup pot with cooking spray and add the vegetables.
2. Cook the vegetables for five minutes on "Medium High" heat. Add the tomatoes and onion soup mix, and stir.
3. Pour 8 cups of water into the pot, thoroughly covering the vegetables. Set the heat to "High," and bring the soup to a boil.
4. Reduce heat to "Low," and place a lid on the pot. Simmer the soup for at least 30 minutes or as long as two hours, for a stronger flavor.
5. Add a pinch each of salt and pepper before serving, then taste the soup and season to your liking. Add two drops of hot sauce or 1/2 teaspoon of garlic powder for more flavor.
